  • Low-fat (up to 35% fat): This type has much of its natural coconut oil removed during processing. It offers a drier texture and a subtler coconut flavor, making it a great option for health-conscious consumers or recipes which needs a lighter coconut taste.
  • Medium-fat (40–50% fat): The most common type, medium-fat desiccated coconut retains a moderate amount of natural coconut oil. It provides a richer texture and flavor compared to the low-fat variety, making it a versatile choice for a wide range of dishes.

Shelf Life:

The shelf life of Vietnamese desiccated coconut depends on its fat content:  

  • High-fat: Up to 18 months when stored unopened in cool, dry conditions.  
  • Low-fat: Up to 24 months under the same storage conditions.  

Once opened, it is recommended to store desiccated coconut in an airtight container in a cool, dry place for a maximum shelf life of around 6 months.

4. High quality medium grade Desiccated Coconut

Medium-grade desiccated coconut is slightly larger particle size compared to the fine grade. It offers a delightful chew and a more pronounced texture, making it a standout ingredient in both culinary and industrial applications.

High-fat content: Medium-grade desiccated coconut exclusively contains high-fat content (63% minimum), which enhances its rich coconut flavor and aroma.  

Versatility: It is perfect for desserts, granola bars, trail mixes, yogurt parfaits, and as a topping for bread and cakes. It also adds moisture, flavor, and texture to baked goods like cookies and pastries.

  • Free Fatty Acids: 0.3% max
