Good Quality Black Pepper: Products from HAVIGO
We are HAVIGO – a company specializing in agricultural export. We have been exporting high quality spice products from Vietnam with the best price in the market, in which include black pepper. In this post, let discover one of our best seller products – good quality black pepper from Vietnam.
1. Pre-processing and cleaning of Pepper
Pre-processing and cleaning are two of the most crucial steps before packing peppercorns. Pepper may contain impurities because it is naturally dried. In order to remove impurities like rocks, branches, broken seeds, etc., producers screen the pepper.
They proceed to the cleaning phase following the screening phase. To get rid of dust from the pepper, they use a blower or vibrator. The goal of these two steps is to reduce the amount of pepper admixture as much as possible, usually to 1%. To guarantee that all of the peppers are of the same quality, they then categorize them according to size, color, and quality.
Quality control is so important. Here are 3 standards that people check on the quality of peppercorns.
- Appearance: Check the color, size, and uniformity of pepper.
- Moisture: Ensure the humidity of the pepper meets standards. Normally it is at 12.5%.
- Quality: Check the taste and spiciness of pepper. It must offer spiciness and aroma.
2. Packing Pepper for exports
When it comes to packaging material, there are 3 common methods.
Producers often use PP bags for whole peppercorns. Because they have good bearing capacity, are moisture-proof and preserve the flavor of pepper. For better preservation of flavor and aroma, they apply the vacuum method. This method can ensure pepper is stored in a sealed environment, avoiding air contact and keeping it fresh.
Another method is packing in carton boxes. People use this method to pack small retail packages or send samples to customers. This method is convenient for transportation and storage due to its sturdy shape.
Packaging specifications:
- Weight: Depending on customer and market requirements. Normally, they pack pepper in 25 kg, 50 kg, or even 100 kg.
- Seal: They seal the package to ensure no gaps to avoid mold.
- Labeling: The label package should be clear, with full product information such as product name, weight, production date, expiry date, origin, manufacturer, etc.
Factors that affect the quality of Peppercorns
When exporting, it takes several days for the batch of pepper to arrive at the destination. During the journey, many factors can affect the quality of products. Therefore, producers are always careful to protect peppercorns from these factors.
- Humidity: High humidity will cause pepper to mold and reduce quality.
- Temperature: High temperature reduces the essential oil content that affects the pepper flavor.
- Light: Direct sunlight reduces the quality of pepper.
- Microorganisms: Bacteria and mold can grow on pepper if not properly stored.
By strictly following the above procedures, you can ensure that the pepper is packaged in high quality, meeting the requirements of the international market.
3. Good quality FAQ Black Pepper
FAQ is shorten of “Fair Average Quality”. The FAQ pepper undergoes a simple processing step to remove large impurities like dirt or stones, as well as objects like branches. It might still contain some admixture, though, no more than 1%. Small leaves, twigs, or broken peppercorns may be examples of this. Due to less processing, FAQ pepper can maintain a more robust flavor than MC pepper, despite generally being less appealing.
In appearance, FAQ black pepper is dark brown to black in color. While the size varies, it is typically smaller and less consistent than peppercorns of higher quality. Its shape is also round or slightly wrinkled. However, because of the lack of processing, it might have some leaves, twigs, or broken peppercorns. Consequently, FAQ pepper might look less polished than MC grades. Compared to premium peppercorns, FAQ black pepper has a slightly lower level of aroma but a stronger, more spicy flavor.

4. Good quality MC Black Pepper
MC black pepper stands for Machine Cleaned black pepper. Machines are used to thoroughly clean this variety of black pepper in order to get rid of dust, twigs, leaves, and other foreign objects. Unlike FAQ (Fair Average Quality) black pepper, which goes through a less thorough cleaning process, this produces a cleaner and more consistent product.
Here are some key characteristics of MC black pepper:
- High purity: Very low levels of admixture (foreign objects), typically around 0.2% max.
- Uniform size: Machine cleaning helps to ensure the consistency of the size and shape of the peppercorns.
- Cleaner appearance: The absence of impurities makes MC black pepper visually appealing.
- Potential for stronger flavor: Some argue that the minimal processing of MC pepper can result in a more robust flavor profile.
