Harvesting and selecting raw materials

First, the farmer mainly harvested cashew nuts during the dry season. They typically collect naturally fallen ripe cashew apples to ensure the best quality, and after harvesting, the nuts are separated from the fruit and prepared for the next processing stage.

Drying and dehydrating cashew nuts

After separation, processors sun-dry raw cashew nuts for 2 to 3 days. This process reduces moisture and hardens the outer shell. Then, they further dehydrate the nuts in controlled heat to achieve the desired dryness for further processing.

Roasting and shelling

Roasting makes the outer shell brittle and easier to crack. After cooling, the shelling machines process the cashews. Workers need to be careful because this step requires precision to avoid breaking the kernels inside.

Workers remove the thin inner skin by steam or manually. This crucial step affects the appearance of the cashew. Then, processors sort the kernels by size, shape, and color to meet various market demands.

Before packaging, cashew kernels go through strict quality checks. They must be free of impurities, burnt spots, or mold. Samples are checked visually and by specialized equipment.
