Grain Size of Rice: Short, Medium, and Long Grain

Have you ever wondered why there are so many varieties of rice? A big part of it comes down to grain size! The grain size of rice is typically classified into three categories: short, medium, and long. So, what are the differences between the three of them? Let’s find the answer in the following post!

1. Classification of Rice: 3 grain size of Rice

This classification helps us understand the characteristics of different white rice varieties.

3 Size of Rice

Short Grain Rice: As its name short grain rice is short and plump (length <5.50 mm). They have a round or slightly oval shape. Short-grain rice tends to be sticky and clump together. When you cook it, the grains release starch, resulting in a cohesive texture. It’s commonly used in dishes like sushi, risotto, and rice puddings due to its ability to hold together well.

Medium Grain Rice: This size of rice is plump and slightly elongated. Its shape resembles oval beads (length of 5.51 to 6.60 mm). It strikes a balance between the stickiness of short-grain rice and the fluffiness of long-grain rice. Medium-grain rice is creamy and slightly sticky.

Long Grain Rice: This rice is long and slender, its length is several times longer than its width. The grains have a straight, cylindrical shape (length from 6.61 to 7.50 mm). Long-grain rice remains fluffy and separate. The grains don’t stick together much, allowing them to maintain their individual integrity.

Remember that each type of rice has its unique characteristics, and the choice depends on the desired texture, flavor, and culinary application.

2. Kinds of Rice from Vietnam

In Vietnam, there are many kinds of rice, which can be provided into the categories of Short, Medium and Long sizes. Let’s find out about these kinds of rice:

  • Short-grain rice: IR504, Medium (Ham Chau), Japonica
  • Medium-grain rice: OM5451, DT8, Jasmine
  • Long-grain rice: ST25 (the best rice in 2019 and 2023), KDM

Choosing the right rice can significantly impact the success of your dish. Here are some popular examples for each type:

Short-grain rice: It is sticky and plump after cooking. It absorbs flavors well and has a slightly sweet taste.

  • Sushi: Short-grain rice is the star of sushi rolls. Its stickiness helps hold the ingredients together, creating those delightful bites.
  • Japanese rice balls (Onigiri): These handheld rice balls often have flavorful fillings and are wrapped in seaweed. Short-grain rice ensures it holds its shape.
  • Risotto: The creamy consistency of short-grain rice makes it perfect for classic Italian risotto dishes.

Medium-grain rice: This rice kind is creamy and slightly sticky, with a balanced texture.

  • Paella: This Spanish dish features saffron-infused rice with seafood, chicken, and vegetables. Medium-grain rice absorbs the rich flavors beautifully.
  • Creamy rice pudding (Arroz con Leche): The creaminess of medium-grain rice shines in this comforting dessert.
  • Jambalaya: A Louisiana favorite, jambalaya combines rice, sausage, shrimp, and spices. Medium-grain rice holds up well in this hearty dish.

Long-grain rice: This kind of rice remains fluffy and separate after cooking. It has a mild flavor.

  • Pilaf: Long-grain rice shines in pilaf recipes, where each grain remains distinct. Add herbs, spices, and vegetables for a flavorful side dish.
  • Rice bowls: Whether it’s a teriyaki chicken bowl or a veggie stir-fry, long-grain rice provides a neutral base for various toppings.
