SHU and Spiciness: How to Measure the Spiciness of Chili

To determine their spiciness, people use the unit of SHU (Scoville Heat Units). This scale quantifies the pungency or spiciness of chili peppers, from the lowest to the highest. SHU scale and spiciness of Chili?

The Scoville scale was developed by American chemist Wilbur Scoville in 1912. It measures the concentration of capsaicin, the compound responsible for the heat in chili peppers. The taste testers progressively dilute a chili pepper extract with sugar water until the heat is no longer detectable. The higher the dilution factor, the higher the SHU rating.

Here are some popular spicy levels of chili on the SHU scale.

Medium Chili (2,500-50,000 SHU): These peppers offer a moderate level of heat, making them a popular choice for many dishes. Jalapeños and Anaheim peppers are common examples, providing a pleasant warmth without overwhelming the dishes.

Hot Chili (50,000-350,000 SHU): As we ascend the scale, the heat intensifies. Serranos and Thai chili peppers are examples of hot chilies. They deliver a fiery hot that can elevate your taste buds to new heights. In Vietnam, Celestial chili is one of the hottest chilies with 100,000 SHU!

Very Hot Chili (350,000-800,000 SHU): These peppers are seriously hot and can induce significant mouth burning. Habanero peppers and Scotch Bonnet chilies are notorious for their intense heat. Therefore, people often use them to add a fiery kick to sauces and dishes.

Extremely Hot Chili (above 800,000 SHU): At the top of the spice scale, they are truly ultra-hot chili peppers. Ghost peppers and Carolina Reaper peppers are among the hottest peppers in the world. They are capable of delivering a searing sensation that can be both exhilarating and overwhelming.
